Parmesan Couscous stuffed Bell Peppers

I have a fantastic recipe to share with you! I’ve been making couscous for years and stuffed bell peppers for years. So why not combine the two? ๐Ÿ˜‰
This turned out absolutely delicious. Here is my perfected Parmesan Couscous recipe.

1 box Near East Parmesan Couscous Mix
1 whole yellow, orange, or red bell pepper
juice from one lemon
1/4 cup diced red onion (you can use green onion)
1/4 cup diced tomato
1/4 cup diced cucumber
1/4 diced yellow, orange, or yellow bell pepper
1 clove minced garlic
Palm full of fresh Parmesan cheese
Cracked pepper and sea salt

Make couscous according to box directions. After fluffing when finished cooking add lemon juice, onion, tomato, cucumber, garlic, bell pepper, cheese, and salt & pepper to taste. Fluff with fork once more and it’s delicious! Cut the top off of your pepper and clean the seeds out. Spoon your mixture into the pepper. Put the top back on and wrap in foil. We put these on the grill, but you could bake them as well. Grill them 5-10 minutes. Just long enough to warm the pepper up. Keep in mind when cooking your vegetables you lose nutrients, so eating them raw gives you max benefits. Enjoy!

Fit tip of the day! Red bell pepper raw has more vitamin C than a cup of orange juice. ๐Ÿ™‚
