Lettuce Wraps

Summer is here and so is the heat. These lettuce wraps are so light and refreshing. I first came across lettuce wraps when I lived in California, 7 years ago. My best friend and I were on The Zone and we weren’t eating bread. So we replaced our sandwiches with lettuce wraps. You can turn any of your favorite sandwiches into a lettuce wrap. Healthy eating doesn’t have to be complicated. Let me show you how to whip these babies up. You’ll love them!

Chicken Salad Lettuce Wraps

Ingredients:
1 cup of diced cooked chicken breast
1/4 cup diced cucumber
1/4 diced tomato
Small handful of red grapes cut in half
Red onion to taste
1 tablespoon mayo with olive oil
Juice of half a lemon
Pepper
1-2 lettuce leaves

Directions:
Rinse whole lettuce leaves and pat dry. Be careful not to tear them. In mixing bowl add the rest of your ingredients and mix thoroughly. I replaced salt with lemon in this recipe. So just add pepper to taste. Arrange the lettuce leaves on your plate and pile the chicken salad in the center. Wrap the lettuce around the chicken salad and enjoy!
