Spinach Bread

This is awesome! Very moist and tastes delicious with thinly sliced mozzarella cheese and tomato. It’s also fantastic just sliced and eaten alone.

Ingredients:

4 eggs
1 large bag of fresh spinach
2 tablespoons butter
1/2 cup pine nuts
2 cloves minced garlic
15 basil leaves
1/4 teaspoon salt (optional)

Instructions:
Preheat oven to 350 degrees. Wilt spinach in pan on low. Once wilted squeeze out as much moisture as possible.
Melt butter over low heat and add pine nuts and garlic, toasting until golden brown. Put them in food processor with the basil and pulse a few times. Add spinach and salt and pulse for 10 seconds on high. Stir in eggs. Scrape into buttered baking dish. Bake 30 minutes. Let cool, then cut.
